BROCCOLI CHEESE SOUP

Today was a warm December day.  65 degrees.  I thought about doing a little work in the yard to get rid of the rest of the fall leaves, but it began to rain.  Shucks.  So instead I whipped up a batch of Broccoli Cheese Soup and it was yummy!

Here's how.....

Gather your ingredients:  Whole Milk, Half and Half, Butter, Broccoli, Cheddar Cheese, Onion, Salt and Pepper and Nutmeg

Begin by melting a stick of butter in a large pot

Add a whole onion, diced.  Saute for 3 or 4 minutes.

Add a 1/3 of a cup of flour.  Stir and cook another minute.

Add 4 cups of Whole Milk and 2 cups of Half and Half.

Add 4 heads of fresh broccoli florets.

Stir well.  Cover and Simmer for 30 minutes or until Broccoli is tender.

Take pictures of the pretty apples and tangerines on the counter top.  Oh wait, you don't have to do that.  Your soup will turn out just fine if you don't.

Here is the very important part.  V E R Y   I M P O R T A N T!!!  Turn the heat off.  Let your soup base cool down some.  THEN stir in your 3 cups of shredded Cheddar Cheese.   Bring the heat back up a little so the cheese begins to melt.  The key is LOW and SLOW.  Low heat and slowly add cheese allowing it to melt.  If your soup base is too hot, your cheese proteins will separate and you'll have ugly, gritty cheese. YUCK.  -  I did not know to do that....see the boiling bubbles in my soup.  That is bad!

The cheese melted all right, but we had gritty soup.  It tasted just fine, but now I know better the next time I make it.

Your soup can be eaten as is, or blending in a blender to take the chunkiness out of it.

I mashed my broccoli down with a whisk then dumped the whole pot of soup into the crock pot set on warm to wait for the dinner hour to arrive.


We served ours with a sprinkle of cheddar cheese and bacon bits on top.

Ingredients

  • 1 whole Onion, Diced
  • 1 stick 1/2 Cup Butter
  • 1/3 cup Flour
  • 4 cups Whole Milk
  • 2 cups Half-and-half
  • 4 heads Broccoli Cut Into Florets
  • 1 pinch Nutmeg
  • 3 cups Grated Cheese (mild Cheddar, Sharp Cheddar, Jack, Etc.)
  • Small Dash Of Salt (more If Needed)
  • Freshly Ground Black Pepper
  • Splash Of Chicken Broth If Needed For Thinning

Preparation Instructions

Melt butter in a pot over medium heat, then add the onions. Cook the onions for 3 to 4 minutes, then sprinkle the flour over the top. Stir to combine and cook for 1 minute or so, then pour in milk and half-and-half. Add nutmeg, then add broccoli, a small dash of salt, and plenty of black pepper.
Cover and reduce heat to low. Simmer for 20 to 30 minutes, or until the broccoli is tender. Stir in cheese and allow to melt.
Taste seasonings and adjust if needed. Then either serve as is, or mash it with a potato masher to break up the broccoli a bit, or transfer to a blender in two batches and puree completely. (If you puree it in a blender, return it to the heat and allow to heat up. Splash in chicken broth if needed for thinning.)

Might Just Be the Worlds BEST Potato Soup!

As many of you know, I don't like to cook.  But I am a mom of three growing boys, two of whom are teen-agers so I cook.  Every week night, I cook. I love easy recipes.  I love the dump and go kind of recipes.  (You know, open a bunch of this and that, dump it in a pot and it makes a delicious easy meal)
I hate to tend a stove, an oven, a boiling pot!  I'd rather clean up a mess than cook a meal.  All this being said leads me to the reason I write this post.  I found an AWESOME recipe for Loaded Baked Potato Soup.  It's easy.  It's delicious!  It's comfort food!  You can make it in a crockpot or on the stove top.


Here is the recipe:

LOADED BAKED POTATO SOUP

16 oz bag frozen cubed potatoes
2   3 oz jars of real bacon pieces
8 oz cream cheese, softened
12 oz sour cream
16 oz milk
12 oz chicken broth
6-8 green onions, chopped
Salt
Pepper
Colby-Jack cheese, shredded
Bread Boule (optional)

In a large pot or crockpot add potatoes, a 3 oz jar of bacon pieces, softened cream cheese, sour cream, milk, chicken broth, 3/4 of chopped green onions, salt and pepper to taste.
Cook on low heat, stirring often for approximately 1 hour in large pot (2-3 hours if using crockpot).
Serve hot in bowl or bread boule topped with green onions, bacon pieces and shredded cheese.
Enjoy!!!

serves about 6 people, so make a double batch if you want leftovers or have hungry teen-aged boys!

Soup's On

This post is for Katie and Jono who love to make soup....

Tonight I made Taco Soup for dinner. I've been meaning to give Katie and Jono the recipe, so I decided to take photos as I made it.

A special thanks to my friend Duchess for posting the recipe on her blog and helping me shop for the ingredients the first time I made it. Now it's a monthly staple around here.

The shopping list:
2 pounds ground beef
1 large chopped onion
1 small can of green chilies
2 cans of Rotel tomatoes
1 can of Ranch Beans (I use Bush's Chili Beans because I can't find Ranch beans up North)
1 can of Black Beans
1 packet of Taco Seasoning
1 packet Ranch Dressing Seasoning
Frozen Corn


1. Brown your ground beef with onions

2. Drain off excess grease and put hamburger into your favorite soup pot
3. Add beans, tomatoes and chilies
4. Stir all together and add a can of water

5. Toss in your corn - I don't measure it out, just a few handfuls of frozen corn does the trick
6. Add your packets of Ranch dressing and taco seasoning....stir well

7. Simmer for a few hours. I usually make the soup at noon so we can eat at 5pm.
8. Serve in your favorite soup bowl with corn chips

License to Grill....

{REVOKED!}
Some people enjoy cooking, I'm just not one of them. But grilling, come on, everyone can grill, right? You just put some meat on and stand near and flip. How hard it that? Well, I guess for me it's difficult. I put the burgers on, waited, flipped them once, went in the house to put the french fries in the oven and noticed that the kitchen floor was still a mess from the bonfire/cookout party we'd had the night before. So as any tidy, obsessed with clean mom would do I mopped the kitchen floor, and oh yeah, I answered the phone. It was my hubby telling me what time he'd be home for dinner. As I returned to the grill my attention was immediately caught by the fire leaping out from under it's hood.

I opened the lid to find our dinner in flames. I quickly removed the meat from the grill, took a few shots and doused the flames with a cup of water.

Dinner saved. Whew! Actually I had to cook a few a little longer and add the cheese. They were still yummy!

Logan's Choice

After church on Sunday all 5 of us went to the grocery store. I was trying to plan dinners for the week, so I asked the kids what they would like. Logan chimed in "How about grilled chicken on salad?" Mmmmmm, one of my favorites. So tonight was Logan's night. Look how yummy!







Ok, I should have checked to see if we had enough salad dressing before making dinner. Whew, just enough for all of us.
